Smoked Salmon Scrambled Eggs

Ingredients

Butter
1 tbsp

Centra Eggs

Chives
1 handful chopped - optional

Coconut Oil
1 tsp

Smoked salmon
2 slice torn into pieces
Add to list
Add all to shopping list

Method

  1. Add coconut oil and eggs to a cold saucepan.
  2. Place on a low heat and keep stirring.
  3. As the eggs start to cook keep stirring to ensure a soft fluffy consistency.
  4. About half way through add in your butter and smoked salmon pieces still stirring all the time.
  5. Cook to your desired consistency, remember that the residual heat will keep cooking the eggs in the pot so if you like them soft remove from the heat a bit early.

Serve topped with chopped chives and some sourdough toast is delicious on the side.
